INGREDIENTS

  • 1 8 oz block cream cheese, softened
  • 1/3 c. mayo
  • 1/3 c. sour cream
  • 1 tsp. garlic powder
  • 10 slices chopped cooked bacon
  • 2 jalapeños, minced
  • 1 1/2 c. shredded Cheddar
  • 1 1/2 c. Shredded Monterey Jack
  • kosher salt
  • Freshly ground black pepper

DIRECTIONS

  1. Preheat oven to 350º. In a large bowl, stir together cream cheese, mayo, sour cream, garlic powder, most of cooked bacon (reserve some for topping), most of the jalapeños (reserve some for topping), and 1 cup cheddar, and 1 cup Monterey Jack and season with salt and pepper.
  2. Transfer to a skillet for baking and sprinkle with remaining 1/2 cups cheddar and Monterey Jack, bacon, and jalapeños.
  3. Bake until bubbly, 15 minutes. (If desired, broil 3 minutes.)

INGREDIENTS

  • 1 tbsp. extra-virgin olive oil
  • 1 small white onion, chopped
  • 1/2 lb. ground beef
  • kosher salt
  • Freshly ground black pepper
  • 1/2 c. kethcup
  • 2 tbsp. yellow mustard
  • 2 cloves garlic, minced
  • 1/4 c. brown sugar
  • 1 tbsp. chili powder
  • 2 c. shredded Cheddar
  • 1 c. Shredded Monterey Jack
  • 2 tubes refrigerated French bread dough (such as Pillsbury)
  • 2 tbsp. melted butter
  • 1 tbsp. Freshly Chopped Parsley

DIRECTIONS

  1. Preheat oven to 350º. In a large skillet over medium heat, heat oil. Add onions and cook until soft, 6 minutes. Add ground beef and cook until no longer pink, 6 to 8 minutes more. Season with salt and pepper. Drain fat.
  2. Stir in ketchup, mustard, garlic, brown sugar, and chili powder. Simmer until thick, 5 minutes. Stir in 1 cup cheddar and 1/2 cup Monterey Jack. Push dip into center of skillet to make room for a bread ring.
  3. Diagonally score the log of French bread dough and slice into 1/2″pieces. Place bread pieces around dip in skillet and brush with melted butter.
  4. Sprinkle bread with parsley and top dip with remaining cheese. Bake until cheese is melty and bread is golden, 25 minutes.

Hot Crawfish Dip

Ingredients

1/2 cup butter

1 bunch green onions, sliced (about 1 cup)

1 small green bell pepper, diced

1 (1-lb.) package frozen cooked, peeled crawfish tails, thawed and undrained

2 garlic cloves, minced

1 (4-oz.) jar diced pimiento, drained

2 teaspoons Creole seasoning

1 (8-oz.) package cream cheese, softened

French bread baguette slices

Garnishes: sliced green onion, chopped flat-leaf parsley

Preparation

Melt butter in a Dutch oven over medium heat; add green onions and bell pepper. Cook, stirring occasionally, 8 minutes or until bell pepper is tender. Stir in crawfish and next 3 ingredients; cook, stirring occasionally, 10 minutes. Reduce heat to low. Stir in cream cheese until mixture is smooth and bubbly. Serve with toasted French bread slices.

 

 

 

Homemade Tequila  Infused Mango Salsa

  • Makes 2 1/2 cups

Ingredients

  • 1 large mango, peeled, pitted and diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped red onion
  • 1 tablespoon fresh lime juice
  • 2 teaspoons seeded and minced serrano chile
  • 1 teaspoon finely grated lime zest
  • 1 clove garlic, minced
  • 1 1/2 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 1/2 cup of Patron Premium Tequila

Instructions

In a large bowl combine mango, cilantro, onion, lime juice, chile, lime zest, garlic and olive oil; season with salt and pepper to taste. Chill or let sit at room temperature for at least 1 hour to allow the flavors to blend.

Spicy Crock Pot Taco Queso Dip

A super cheesy dip made with taco-seasoned ground beef and Rotel.

INGREDIENTS:

  • 1 pound ground beef
  • 1 yellow onion, finely diced
  • 1 large (or 2 small) jalapeños, seeded and finely minced
  • ⅔ cup water
  • 1 packet of taco seasoning mix (homemade or store-bought)
  • 32 ounces Velveeta cheese, cut into cubes
  • 2 (10-ounce) cans Rotel

DIRECTIONS:

  1. In a large skillet, brown the ground beef and onion over medium heat until the meat is no longer pink. Drain. Add the jalapeños, water and taco seasoning, increase the heat to medium-high and cook, stirring frequently, until the liquid has evaporated. Remove from heat.
  2. In a 4 to 6-quart slow cooker, add the prepared beef mixture, the Velveeta cheese and the cans of Rotel. Stir well and cook on low until the cheese is completely melted, 1 to 2 hours. Keep the slow cooker set to warm to serve during a party, giving the mixture a good stir before serving.
